Healthy Banana Bread

This is a delicious healthy banana bread that I've been making for years. The recipe is flexible, optionally sugar-free and dairy-free, and can be embellished with chocolate, nuts, and fruit. A great way to use your over-ripe bananas.

Ingredients / Directions: 

Combine in a large bowl:
2 c light whole spelt flour (or whole wheat or barley - or a mix of flours)
1/2 tsp salt
1/2 tsp soda
1 tsp baking powder

Combine separately:
3 lg very ripe bananas (about 1&1/2c) - mashed
2 eggs
*1/2 c sucanat or brown sugar
1/2 c milk or substitute
zest of a lemon or orange (optional)
2 tsp vanilla or 1 Tbsp dark rum

Mix wet and dry until just incorporated.

Optional: Fold in approximately:
1/2 c chopped walnuts or pecans
1/3 - 1/2 c dark chocolate pieces
1/2 c chopped dates

Pour into a generously greased and dusted loaf pan (I use a glass pan). Bake at 350 for about 50 min - a toothpick inserted in center should come out clean. Wait 10 minutes before removing from pan and placing on a rack to cool. Enjoy :-)

* For sugar-free (free of refined sugar) or lower-sugar banana bread, replace the sugar with 1/3c of unsweetened fruit juice concentrate (apple, orange, white grape), agave syrup, maple syrup or honey

This is a great recipe for banana bread! I have an old tried and true recipe that I've made it in the past, but was looking for a healthier option. This one is really good, nice and moist. I used about 6 bananas to make the 1 1/2 cups-I'm glad you added the measurement in there, or it would have been quite dry and not near as good. I used whole wheat flour, and didn't add any of the optional ingredients, but added 1 tsp of cinnamon. Great recipe and great site! Keep up the great work Patty!

Thank you Ali! It's amazing how differently sized "regular" bananas can be. This recipe is pretty forgiving, so a bit less that 1 1/2 c of banana is ok too.

This recipe is really great! When I made it my husband was skeptical because it didn't have sugar and lots of butter. He now asks me to make it all the time. Great healthy option for a classic.

Healthy Banana Bread

This banana bread is AMAZING! I really enjoy baking, its like therapy for me :) Its great to know that I can bake things I don't feel guilty about eating later :) I am looking forward to trying more of your recipes. My two year old inhaled this banana bread and my husband loved it!

I made this recipe over the weekend, and everyone LOVED it. It was very moist! I added chocolate chips and chopped almonds as well as topped it with toasted chopped almonds to add some more texture. Overall this is a delicious recipe
