Pretty little cookies made with oats, flax and dark chocolate...
1/3 c whole golden flax seeds (grind with a coffee grinder or blender) (OR 1/2 c pre-ground)
1 c old-fashioned rolled oats (for gluten-free use gluten-free rolled oats)
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
2/3 c orange juice
1/2 c natural peanut butter
2 Tbsp sucanat or packed brown sugar
1 tsp vanilla
Combine wet and dry: mix well. Then mix in:
2-3 Tbsp finely chopped candied ginger
Let batter sit for at least 15 minutes 1 hour.
Drop by the teaspoon-full onto a parchment lined cookie sheet.
Place 1 piece of dark chocolate on each.
Bake at 350 for 10-15 min - until slightly browned.
