Recipe from my lovely cousin Carolyn
2 egg whites (or 1 whole egg)
2 tbsp protein powder (soy or whey)
1 tbsp ground flax seed
1/3 cup oats (or gluten-free oats)
1 tsp vanilla
Cinnamon
Pinch of sea salt
Raisins (1 or 2 tbsp)
Pinch of Stevia (natural sweetener)
1 tbsp water
Mix this all together. Heat a small pan and lightly spray with olive
oil. Drop gooey mixture on like you would pancake batter and spread out
over pan. Cover with lid and cook for a few minutes, flip, remove cover
and cook till other side is also golden brown.
Cool on baking racks and freeze if necessary.
Be creative! Variations could include the addition of sesame seeds,
hemp seeds, or other seeds. Substitute dried cranberries for the
raisins. Place on top in decorative patterns before flipping for added
fun.

I just made one of these with the following alterations:
1 whole egg
1/4 c oats
1 standard scoop of rice protein powder
no raisins
(the rest the same)
I blended it up in a blender, cooked it with grape seed oil, and had it warm with maple syrup - it was really good and satisfying!

despite it's chemical-sounding name, xylitol is a safe, plant-based sweetener, my naturopath told me about it.
i use that when baking for a sweeter taste, plus it helps give wheat-free baking a lighter texture

I've made these with sprouted brown rice protein powder (instead of the whey or soy) - and if you can't find that, a gluten-free flour like quinoa or chickpea should work well too.

I just made this with quinoa flour instead of the protein powder, as well as oat milk instead of water and it was delicious! Thanks for the great recipe!
