An easy versatile favorite.This basic recipe can be made using wheat or fine spelt flour, and can be made dairy-free.
Combine the following ingredients in a bowl and beat lightly with a whisk until well combined, but not foamy:
1/2 c milk or substitute
2 tsp - 1 Tbsp vanilla or 1 Tbsp dark rum
1/4 c light honey, maple syrup, agave syrup, or sugar
1/2 c fine whole spelt or wheat flour
1/8 tsp salt
*1/8 tsp freshly grated nutmeg (*optional)
Generously butter or oil a pie plate. Sprinkle with 1Tbsp sugar (optional).
Add 3 - 4 c of your choice of fruit into the prepared pan:
berries: cherries, blueberries, raspberries
sliced fruit: fresh figs, apricots, peaches, plums
Pour batter over fruit and bake in a pre-heated oven at 350 for about 50 minutes, or until puffy and golden brown. Rotate half way through baking.
Enjoy warm, at room temperature, or cold. Great for dessert,
breakfast, or a snack. You can sprinkle icing sugar on top if you like.
