Healthy Carrot Gingerbread

Patty
Grind (easy to do in a blender):
2 Tbsp flax seeds (or 2 1/2 Tbsp pre-ground)
1/4 c gluten-free oats or millet (or oat/millet flour)
To this, add and blend in:
1/2 c milk, milk substitute, or unsweetened fruit juice (apple, orange, white grape)
1/2 c apple sauce
1/4 c unsweetened fruit juice concentrate (comes in frozen cans: apple, orange, white grape) or honey
1/4 c blackstrap molasses
2 eggs
2 tsp vanilla
*freshly grated zest from an organic orange or lemon (*optional)
Combine separately:
1 c brown rice flour
1/2 c quinoa flour
1 tsp baking powder
3/4 tsp baking soda
1/4 - 1/2 tsp sea salt
2 - 3 tsp cinnamon
1 1/2 tsp ginger
1/4 tsp cloves
1/4 tsp allspice
1/8 tsp freshly grated nutmeg
Mix wet and dry together until just combined (don't over-mix).
Fold in:
1 1/2 c grated carrots
1/2 - 1 c chopped and dusted dried dates, apricots, or figs
*Optionally fold in:
1/2 c chopped walnuts
1 Tbsp - 1/4 c chopped candied ginger
Pour batter into loaf pan that's been greased and dusted with rice flour. Bake in an oven that's been pre-heated to 350 for 50 - 60 minutes. It's ready when a toothpick inserted in the center comes out clean.
