 Healthy Chocolate Zucchini Cake

This classic cake is based on my grandma's delicious (and very rich) recipe. I altered her recipe to make it healthier, while keeping the delicious flavours and texture of the original. This version uses whole ingredients, a lot less sugar and fat (less than half the fat! don't worry, the zucchini keeps things moist) - and more chocolate, spice and vanilla. Ingredients / Directions: 

Preheat the oven to 325. Grease and dust a large 13"x9" pan.

Beat together till smooth (easy with a blender):

1/2 c plain natural yogurt
1/2 c milk (or milk substitute, or yogurt)
2 large eggs
2-4 tsp vanilla
1/3 c light honey (or agave syrup)
1/2 c packed brown sugar or sucanat

Sift into a large bowl:

2 c light whole spelt or whole wheat flour
1/4 c cocoa
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
generous 1 tsp cinnamon
1/2 tsp cloves

Mix dry ingredients until well combined - I use a wisk. Make a well in the dry ingredients, then pour in wet mixture and mix with a wooden spoon (or firm spatula) until just combined. Next fold in:

4 oz (120 g) chopped semi-sweet or dark chocolate (or a generous 1/2 c dark chocolate chips)
*generous 2 c packed shredded zucchini
1/2 c chopped walnuts (optional)

* I use one medium, or 2 small zucchinis. The really big ones have large seeds, so I usually avoid them, but that's just me!

Bake for about 50 minutes, rotating pan half way through baking. Test for doneness after 30 minutes. It's ready when the middle springs back when touched, and a toothpick inserted in the center comes out mostly clean. Allow to cool in the pan. Enjoy!

Healthy Zucchini Cake Recipe

This cake was not too bad, but I don't think it should really be called a 'cake'... it's more of a brownie than anything else, and turns out very dense. I think it's still a good recipe, but definitely not what I expected in a cake. I might try the other (not so healthy) zucchini cake recipe just to compare the two, as we have zucchinis coming out our nose this year! =) Great website! Keep up the good work!

This recipe has always turned out great for me. Ive had so many zucchini and this has been my favorite this summer! It usually turns out very moist and the chocolate chips are perfect!

Chocolate Zucchini Cake

This turned out very delicious! Thank you! I just tweeked it a little...instead of the milk I used 1/2 cup coconut oil (so good for you!) and I used greek honey flavor yogurt. I also increased the cocoa powder to almost 1/2 cup. Oh and I used pecans instead of walnuts. My husband is very picky and he LOVED it! It only took 30 minutes to bake on convection setting. Thanks again!!!

You're welcome - and thanks for sharing your wonderful alterations! The coconut oil indeed would add a delicious richness - great addition - I've been baking with it more often lately. I will try using pecans instead of walnuts (as I can't get walnuts where I'm living right now) and I'm sure they will taste amazing in there too. My more recent recipe for zucchini cake is slightly richer than this one (and optionally gluten-free) - closer to your variation of this recipe. :)

My boyfriend is SUCH a picky

My boyfriend is SUCH a picky eater, he rarely touches fruits or vegetables. I made this for him to try and sneak some nutrients into his diet and he loved it, even when he found out what was in it. He asked me to make it for him again!
