Protein Power Pancakes
A quick easy protein-rich breakfast for one. Gluten-free and sugar-free.
1 scoop of protein powder (I use sprouted brown rice protein powder)
1 Tbsp brown rice flour, or gluten-free flour mix
2 tsp ground flax seeds
dash of cinnamon
2 Tbsp water
Heat 1 tsp of grapeseed oil or butter on frying pan, or spray with oil. Pour and spread batter on hot pan and cook at medium heat. At this point, you can optionally sprinkle on:
1/2 chopped banana, or other fruit
slivered almonds, pepitas, sunflower seeds...
Flip pancake when bubbles start to form on uncooked side.
Enjoy as is, or with fresh fruit and maple syrup.
