Swedish Pancake

Preheat oven to 400
Heat cast iron or deep glass pan in oven for 10 minutes
The Basic Rule
One egg per person.
And per each egg: One quarter cup of flour, one quarter cup of milk, one quarter teaspoon of salt
*Start with no less than 4 eggs
So...for the smallest batch, use: 4 eggs, 1 cup of flour, 1 cup of milk, 1 teaspoon of salt
Blend in a blender
Place 4 tablespoons of butter into hot pan
Wait until melted
Pour in batter
Pop in oven for 15 - 25 minutes depending on oven - check regularly
Pull out when raised and just before getting crispy on the edges.
Sauce:
Put sauce pan on medium high heat with a little bit of water
Core and cut fruit (apples or pears) into large chunks with peels on
Add to pot and cover
Let stand on heat for 5 - 10 minutes stirring occasionally
Add 1 tablespoon of brown sugar*
*or maple syrup, or whatever sweetener you like
