Vanilla Walnut Shortbread Cookies
These buttery melt-in-your-mouth cookies are very similar to Mexican Wedding Cakes - great for a special occasion.

1 cup unsalted cultured (sweet) butter
3/4 cup icing sugar
2 1/2 teaspoon vanilla
1 3/4 cups flour, sifted
1/4 teaspoon salt
2 cups walnuts
extra icing sugar for coating
Lightly toast the walnuts (optional). Allow to cool, then grind.
Cream together butter, sugar, and vanilla. Sift in flour and salt and mix in. Next add walnuts and mix well. Use about a tablespoon of batter per cookie, and roll into balls. Bake on parchment-lined cookie sheet at 375 degrees for about 12 to 15 minutes. Place cookies on cooling rack to cool a bit, then while still warm, roll in icing sugar.
