Black Bean Brownies...

Not too long ago I noticed a hot trend around the web - the black bean brownie. The concept is awesome: a rich dark chocolaty brownie made with fiber-and-protein-rich black beans (wheat-free). Sounds like breakfast to me! Above is a pic from a batch I made based on this recipe. (Mine were made with extra chocolate, less butter, less agave, no coffee or walnuts...)

The result tasted great, looked amazing, but didn't really have a brownie texture - and also had to be refrigerated to stay firm. The texture was more like a cheesecake, a really yummy cheese-less cheesecake, so that's what they'll be in their next life. We had no problems scarfing this experiment down.

UPDATE: See comment #3 for the recipe (I've added a bit of starch to firm things up a bit) - apparently they rock. :D

UPDATE 2 (May 10 2011): Check out my new recipe for Really Awesome Black Bean Brownies :)

experimental matcha nori shortbread

Been getting extra-experimental in the kitchen these days: dietary restrictions = inspiration! The challenge: make a splendid unique cookie without: sugar, gluten, nuts, eggs. I came up with these fun little matcha nori shortbread cookies. Still working on them - next time I'd eliminate the nori as it became quite chewy compared to the nice crumbly cookie. These were made with: brown rice flour, tapioca starch, matcha tea powder, organic butter, black sesame seeds and xylitol - an interesting naturally-derived "sugar" that won't spike blood sugar levels, feed candida, or cause cavities - still testing baking with this sweetener...

healthy baking on the bbq

hot off the grill: fresh blueberry clafouti!

This summer I did a bit of experimental baking on the bbq: fun! (and a great idea when you don't want to heat your place up)

After botching some lovely sprouted quinoa muffins that I tried to bake on the bbq, I was ready to learn from my mistake: don't put the pan directly on the grill, or else your goods will burn burn burn.

peanut butter miso cookies...

peanut-butter miso cookies
peanut butter miso cookies baking in the oven

I've been dreaming about making peanut butter miso cookies for a while... Behold my first attempt happily baking in the oven. The peanut butter cookie dough with savory miso ended up tasting both unique and familiar: addictively good! I rolled each cookie in sesame seeds which produced a fantastic crust.

I'll post the recipe once I've verified that these are, in fact, very awesome :-)
