experimental matcha nori shortbread


Been getting extra-experimental in the kitchen these days: dietary restrictions = inspiration! The challenge: make a splendid unique cookie without: sugar, gluten, nuts, eggs. I came up with these fun little matcha nori shortbread cookies. Still working on them - next time I'd eliminate the nori as it became quite chewy compared to the nice crumbly cookie. These were made with: brown rice flour, tapioca starch, matcha tea powder, organic butter, black sesame seeds and xylitol - an interesting naturally-derived "sugar" that won't spike blood sugar levels, feed candida, or cause cavities - still testing baking with this sweetener...

This weekend while visiting my cousin in Guelph, we ended up wandering into a little town called Elora. Here we found a tiny Japanese tea shop - to our delight! The owner was an enthusiastic tea master from Japan, who gave us the low-down on matcha tea. (I'm sipping some high quality organic matcha tea as I write - mmm...)

We scored great quality matcha tea along with special bamboo whisk and scoop, as well as the tea master's blend of matcha with cane sugar to share with our lovely hosts.

With the matcha/sugar mix, we spontaneously concocted these gorgeous
delicious (stimulating!) matcha martinis. (I googled "macha martini" and, as I suspected, others have made variations of this cocktail.)

Here's a matcha cookie I recently made from rice flour, olive oil, honey, tapioca starch, matcha, and salt. I ended up using too much matcha (2 Tbsp) and got a bit of a buzz off them :-)

Snowflake cookie stamp was a lovely gift from girlfriend Pea.
